How to make tofu at home with the DIY Tofu Kit: (For 400g tofu)
1.Sock 200g soy beans over night with plenty of water, drain water and blend the soy beans together with 2 litter of water.
2.Bring the soy water to boil then turn the heat low immediately, simmer for 10 minutes. If you are using shop bought soy milk, bring 2 litter to almost boiling then turn the heat off.
3.Dissolve 1-2 teaspoons natural calcium sulphate in one cup of warm water. And pour the liquid slowly into the slightly cool down (about 80C) soymilk while gently stirring the Soya milk and allow the mixture to stand for 15 min.
4.Once all Soya milk is separated into small white curds of tofu and an amber liquid, transfer them into a mould lined with cheese cloth. A heavy weight is placed on the lid of the container and allowed to sit for about 2 hours. Empty the resulting block of tofu and store in sealed container with plenty of water.
